Ingredients

  • 1 ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 eggs
  • ¾ cup dark brown sugar
  • 1 cup pumpkin puree
  • ¼ cup melted butter
  • ¼ cup milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  3. In a separate bowl, beat the eggs with the sugar. Add the pumpkin puree, melted butter and milk, and mix until blended.
  4. Add the wet ingredients to the dry ingredients and mix until just blended.
  5. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
