Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup butter, softened
  • 3/4 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350°F and grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in boiling water until the batter is smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. To make the frosting, beat butter in a large bowl until creamy.
  8. Add cocoa powder and powdered sugar, alternating with milk, and beat until smooth and creamy.
  9. Stir in vanilla extract.
  10. Once the cakes are completely cool, frost the top of one cake layer with frosting and place the second cake layer on top. Frost the top and sides of the cake with the remaining frosting.
