Ingredients

  • 4 large artichokes
  • 1 lemon
  • 4 cloves of garlic
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs

Directions

  1. Start by preparing the artichokes. Rinse them under cold water, then cut off the stems close to the base. Remove any small outer leaves and trim the sharp tips of the remaining leaves with a pair of kitchen shears.
  2. Squeeze the juice from the lemon into a large bowl of cold water. Place the prepped artichokes into the lemon water to prevent browning.
  3. In a small bowl, mix together the minced garlic, olive oil, grated Parmesan cheese, salt, and black pepper.
  4. Preheat the oven to 375°F (190°C).
  5. Drain the artichokes from the lemon water and pat them dry with a paper towel.
  6. Gently spread apart the leaves of each artichoke and spoon the garlic mixture between them, making sure to distribute it evenly.
  7. Place the stuffed artichokes in a baking dish and pour about 1/4 cup of water into the bottom of the dish.
  8. Sprinkle breadcrumbs over the top of each artichoke to create a nice crispy crust.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and continue baking for an additional 10-15 minutes, or until the artichokes are tender and the breadcrumbs are golden brown.

  12. To eat the artichokes, pull off each leaf and scrape the tender flesh at the base of the leaf with your teeth. Discard the remaining leaf. Once you reach the center, remove the fuzzy choke and enjoy the heart, which is the most tender and delicious part of the artichoke.
