Ingredients

  • 12 cups water
  • 2 stalks lemongrass, cut into 2-inch pieces and smashed
  • 4 kaffir lime leaves, torn into pieces
  • 3 cloves garlic, smashed
  • 4 slices galangal
  • 2 Thai bird's eye chilies, sliced
  • 2 tablespoons fish sauce
  • 1 pound large raw prawns, peeled and deveined
  • 10 cherry tomatoes
  • 1 cup straw mushrooms
  • 3 tablespoons lime juice
  • 1 tablespoon palm sugar
  • 1/4 cup fresh cilantro leaves
  • 2 green onions, sliced
  • Salt to taste

Directions

  1. In a large pot, bring water to a boil.
  2. Add lemongrass, kaffir lime leaves, garlic, galangal, and Thai bird's eye chilies. Simmer for 10 minutes to allow the flavors to infuse.
  3. Stir in fish sauce.
  4. Add prawns and cook until they turn pink, about 2-3 minutes.
  5. Add cherry tomatoes and straw mushrooms. Cook for an additional 2 minutes.
  6. Add lime juice and palm sugar. Stir until palm sugar dissolves.
  7. Remove from heat and garnish with fresh cilantro leaves and green onions.
