Ingredients
- 1 cup softened butter
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour

- 1 can (14 ounces) prune or apricot filling
Directions
- Preheat oven to 375°F.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs, one at a time.
- In a separate bowl, combine flour, baking powder, cardamom, and salt. Slowly add to the creamed mixture.
- Roll out dough on a lightly floured surface until ¼-inch thick.
- Cut out 2-inch circles with a cookie cutter. Place on an ungreased baking sheet.
- Spoon a teaspoon of prune or apricot filling in the center of each cookie.
- Fold the edges of the cookie up around the filling, forming a triangle shape.
- Bake for 15 minutes until golden brown.
- Let cookies cool before serving.
