Ingredients

  • 6 large ripe peaches
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish

Directions

  1. Wash and peel the peaches. Slice them into thin wedges.
  2. In a bowl, mix the sliced peaches with granulated sugar and lemon juice. Let it sit for 10 minutes to allow the peaches to release their juices.
  3. In a separate bowl, combine the crushed graham crackers and melted butter. Mix well until the mixture resembles wet sand.
  4. Press the graham cracker mixture onto the bottom of a 9-inch square baking dish to form a crust.
  5. Using a slotted spoon, transfer the peaches onto the graham cracker crust, leaving behind any excess juice.
  6. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. This will be the whipped cream topping for the dessert.
  7. Spread the whipped cream over the peaches, covering them completely. Smooth the top with a spatula.
  8. Place the dish in the refrigerator for at least 3 hours to allow the flavors to meld and the dessert to set.
  9. Before serving, garnish with fresh mint leaves for added freshness and presentation.
  10. Cut into squares and serve chilled. Enjoy the golden rays of peach delight!
