Ingredients

  • 6 slices of bacon, cut into 1/2 inch pieces
  • 1 large onion, chopped
  • 3 cups of gluten free bread crumbs
  • 1/4 cup of butter, melted
  • 4 large eggs
  • 1/2 cup of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
    • Directions

      1. Preheat oven to 350 degrees F.
      2. In a large skillet over medium heat, cook bacon and onion until the bacon is crisp and the onion is translucent. Remove from heat and set aside.
      3. In a medium bowl, combine bread crumbs and melted butter. Mix until combined.
      4. In a separate bowl, whisk together eggs, milk, salt, and pepper. Stir in bacon and onion.
      5. Spray a 9x13 inch baking dish with cooking spray. Spread bread crumb mixture on the bottom of the dish. Pour egg and bacon mixture over the bread crumbs.
      6. Bake for 30 minutes, or until the center is set.
