In a small saucepan, combine the sugar, lemon zest, lemon juice, and vanilla. Heat over medium-high heat until the mixture boils and thickens. Remove from heat and stir in the raspberries.
Pour the raspberry mixture over the cooled crust. Sprinkle with remaining crumb mixture and bake for 25 minutes, or until the top is lightly browned.
