Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup firmly packed light brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 1 teaspoon grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh or frozen raspberries

Directions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. In a medium bowl, combine the flour, brown sugar, baking powder, and salt. Add the melted butter and mix until crumbly.
  3. Press the mixture into the prepared pan and bake (for 15 minutes). Cool completely.
  4. In a small saucepan, combine the sugar, lemon zest, lemon juice, and vanilla. Heat over medium-high heat until the mixture boils and thickens. Remove from heat and stir in the raspberries.
  5. Pour the raspberry mixture over the cooled crust. Sprinkle with remaining crumb mixture and bake for 25 minutes, or until the top is lightly browned.
  6. Cool completely before cutting into bars. Serve and enjoy!
