Ingredients
- 1/2 cup all-purpose flour
- 1/4 cup firmly packed light brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butter, melted
- 1/4 cup sugar
- 1 teaspoon grated lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1 cup fresh or frozen raspberries
Directions
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a medium bowl, combine the flour, brown sugar, baking powder, and salt. Add the melted butter and mix until crumbly.
- Press the mixture into the prepared pan and bake (for 15 minutes). Cool completely.
- In a small saucepan, combine the sugar, lemon zest, lemon juice, and vanilla. Heat over medium-high heat until the mixture boils and thickens. Remove from heat and stir in the raspberries.
- Pour the raspberry mixture over the cooled crust. Sprinkle with remaining crumb mixture and bake for 25 minutes, or until the top is lightly browned.
- Cool completely before cutting into bars. Serve and enjoy!
