Ingredients

  • 1 lb long beans, cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1/2 cup vegetable stock
  • 2 tablespoons tomato paste
  • 1/4 cup coconut milk
  • Salt to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
  2. Add the long beans and cook for another 5 minutes, stirring occasionally.
  3. Add the ground black pepper, oregano, and red pepper flakes and stir to combine.
  4. Add the vegetable stock, tomato paste, and coconut milk and bring to a simmer. Simmer for 10-15 minutes, stirring occasionally, until the long beans are tender.
  5. Taste and adjust seasoning with salt if needed.
  6. Serve hot.
