Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
Add the long beans and cook for another 5 minutes, stirring occasionally.
Add the ground black pepper, oregano, and red pepper flakes and stir to combine.
Add the vegetable stock, tomato paste, and coconut milk and bring to a simmer. Simmer for 10-15 minutes, stirring occasionally, until the long beans are tender.
Taste and adjust seasoning with salt if needed.
Serve hot.
