Ingredients
- 2 cups powdered sugar
- 2 tablespoons shortening
- 2 tablespoons light corn syrup
- 1 teaspoon peppermint extract
- 2 tablespoons water
- 1/2 teaspoon red food coloring (optional)
- 2 cups semisweet chocolate chips
- 2 tablespoons shortening
Directions
- In a medium bowl, combine the powdered sugar, 2 tablespoons of shortening, corn syrup, peppermint extract, water, and red food coloring (if desired). Stir until smooth.
- Shape the mixture into 1-inch patties. Place the patties on a wax paper-lined baking sheet and freeze for at least 30 minutes.
- In a double boiler, melt the chocolate chips and 2 tablespoons of shortening over low heat. Stir until smooth.
- Remove the patties from the freezer. Dip each patty in the melted chocolate and place on a wax paper-lined baking sheet. Refrigerate until the chocolate is set, about 30 minutes.
