Ingredients
3 large potatoes, grated
1 small onion, grated
2 eggs, lightly beaten
1/4 cup all-purpose flour

Directions

Remove the pancake and place on a paper towel-lined plate to drain the excess oil.
Repeat with the remaining potato mixture.
Serve warm with sour cream or applesauce.
