Ingredients

  • 3 large potatoes, grated
  • 1 small onion, grated
  • 2 eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon garlic powder
  • Oil, for frying

Directions

  1. In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, pepper, nutmeg, and garlic powder.
  2. Heat 1/4-inch of oil in a large skillet over medium heat.
  3. Once the oil is hot, spoon 1/4 cup of the potato mixture into the skillet and flatten to form a pancake.
  4. Cook for 3-4 minutes, or until the bottom is golden brown.
  5. Flip the pancake and cook for an additional 3-4 minutes, or until the other side is golden brown.
