Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 3 cloves garlic, minced
- 1 onion, diced
- 2 (14.5 ounce) cans diced tomatoes
- 4 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 2 cups baby spinach leaves
Directions
- Heat the oil in a large pot over medium heat.
- Add the sausage and cook, breaking it up with a spoon, until it is cooked through and lightly browned.
- Add the garlic and onion and cook until the onion is softened, about 5 minutes.
- Stir in the tomatoes, chicken broth, oregano, basil, thyme, red pepper flakes, salt and pepper.
- Cover and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Add the tortellini and cook for 8 minutes, or until the tortellini are tender.
- Stir in the spinach and cook until it is wilted.
- Serve hot.
