Ingredients

  • 1 egg yolk
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of lemon juice
  • 1 cup of vegetable oil
  • Salt and pepper to taste

Directions

  1. In a medium bowl, whisk together the egg yolk, mustard, and lemon juice until well blended.
  2. Gradually add the oil, a few drops at a time, whisking constantly until all the oil is incorporated and the mixture has thickened.
  3. Season with salt and pepper to taste.
  4. Store in an airtight container in the refrigerator for up to one week.
