Ingredients
- 1 pound of all-purpose flour
- 2 eggs
- 1 teaspoon of salt
- 1/4 cup of water, plus more if needed
- 1/2 cup of ricotta cheese
- 1/4 cup of grated Parmesan cheese
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh herbs (such as basil, parsley, or chives)
Directions
- In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and 1/4 cup of water.
- Using a fork, gradually incorporate the flour into the liquid until a dough forms. If the dough is too dry, add more water, 1 tablespoon at a time.
- Turn the dough out onto a lightly floured surface and knead for 5 minutes, or until it is smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- In a small bowl, combine the ricotta cheese, Parmesan cheese, nutmeg, black pepper, and herbs. Mix until well combined.
- Divide the dough into 4 equal pieces. Working with one piece at a time, roll the dough into a thin sheet. Cut the pasta sheet into 3-inch squares.
- Spoon 1 tablespoon of the cheese mixture into the center of each square. Moisten the edges of the dough with a little water, fold the dough over, and press the edges together to seal.
- Bring a large pot of salted water to a boil over high heat. Add the ravioli and cook for 3-4 minutes, or until they are cooked through.
- Drain the ravioli and serve with your favorite sauce.
