Ingredients

  • 2 1/2 cups light rye flour
  • 2 1/2 cups dark rye flour
  • 2 teaspoons active dry yeast
  • 2 tablespoons olive oil
  • 2 teaspoons sea salt
  • 2 1/2 cups water
  • 1 cup sunflower seeds

Directions

  1. In a large bowl mix together the light and dark rye flours, yeast, olive oil, and salt.
  2. Add the water and mix until a dough forms.
  3. Knead the dough for about 10 minutes until it becomes smooth and elastic.
  4. Cover the bowl with a damp cloth and leave it to rise in a warm place for 1 hour or until it has doubled in size.
  5. Once the dough has risen, knead it again for a few minutes and then add the sunflower seeds.
  6. Knead the dough for a few more minutes until the seeds are evenly distributed.
  7. Shape the dough into a round loaf and place it on a greased baking sheet.
  8. Cover the loaf with a damp cloth and leave it to rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake the loaf for 45 minutes or until it is golden brown and sounds hollow when tapped.
  11. Remove the loaf from the oven and leave it to cool on a wire rack.
