Ingredients
- 2 1/2 cups light rye flour
- 2 1/2 cups dark rye flour
- 2 teaspoons active dry yeast
- 2 tablespoons olive oil
- 2 teaspoons sea salt
- 2 1/2 cups water
- 1 cup sunflower seeds
Directions
- In a large bowl mix together the light and dark rye flours, yeast, olive oil, and salt.
- Add the water and mix until a dough forms.
- Knead the dough for about 10 minutes until it becomes smooth and elastic.
- Cover the bowl with a damp cloth and leave it to rise in a warm place for 1 hour or until it has doubled in size.
- Once the dough has risen, knead it again for a few minutes and then add the sunflower seeds.
- Knead the dough for a few more minutes until the seeds are evenly distributed.
- Shape the dough into a round loaf and place it on a greased baking sheet.
- Cover the loaf with a damp cloth and leave it to rise for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the loaf for 45 minutes or until it is golden brown and sounds hollow when tapped.
- Remove the loaf from the oven and leave it to cool on a wire rack.
