Ingredients
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon dry mustard
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley
- 2 cups cooked, diced chicken
- 4 cups cooked broccoli florets
- 1 cup shredded Cheddar cheese
- 1/2 cup crushed buttery crackers
- 2 tablespoons butter, melted
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Stir in flour and cook about 1 minute more.
- Whisk in chicken broth, cream, salt, pepper, and mustard. Bring to a simmer and cook for about 5 minutes, stirring occasionally, until sauce is thickened.
- Remove from heat and stir in Parmesan cheese, lemon juice, and parsley. Add chicken and broccoli and stir to combine.
- Transfer mixture to a 2-quart baking dish. Sprinkle with Cheddar cheese. In a small bowl, combine cracker crumbs and melted butter. Sprinkle over the top of the casserole.
- Bake for 25 minutes, or until cheese is melted and bubbly. Allow to cool for 10 minutes before serving.
