Ingredients
- 2 tablespoons olive oil
- 1 (2 to 3 pound) boneless beef roast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon minced garlic
- 2 tablespoons butter
- 4 cloves garlic, peeled and minced
- 1/4 cup fresh parsley, chopped
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper.
- Place the roast in the skillet and cook for 2 minutes per side, or until browned. Transfer the roast to a roasting pan.
- In a small bowl, mix together the minced garlic, butter, and parsley. Spread the mixture over the top of the roast.
- Roast in the preheated oven for 1 hour and 30 minutes, or until an instant-read thermometer inserted into the center of the roast reads 140 degrees F (60 degrees C).
- Allow the roast to rest for 15 minutes before slicing and serving.
