Ingredients

  • 2 tablespoons olive oil
  • 1 (2 to 3 pound) boneless beef roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon minced garlic
  • 2 tablespoons butter
  • 4 cloves garlic, peeled and minced
  • 1/4 cup fresh parsley, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper.
  3. Place the roast in the skillet and cook for 2 minutes per side, or until browned. Transfer the roast to a roasting pan.
  4. In a small bowl, mix together the minced garlic, butter, and parsley. Spread the mixture over the top of the roast.
  5. Roast in the preheated oven for 1 hour and 30 minutes, or until an instant-read thermometer inserted into the center of the roast reads 140 degrees F (60 degrees C).
  6. Allow the roast to rest for 15 minutes before slicing and serving.
