Ingredients
- 2 tablespoons of olive oil

- 4 cups of vegetable broth
- 1 bay leaf
- 2 zucchini, diced
- 1/4 cup of farina
- Salt and pepper to taste
Directions
- Heat the olive oil in a pot over medium heat.
- Add the onion and garlic and cook until softened, about 3 minutes.
- Add the vegetable broth, bay leaf, and zucchini. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Stir in the farina and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
