Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 bay leaf
  • 2 zucchini, diced
  • 1/4 cup of farina
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the vegetable broth, bay leaf, and zucchini. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  4. Stir in the farina and cook for an additional 5 minutes.
