1 prime rib roast (4-6lbs)
2 cloves of garlic, minced
2 tablespoons of fresh rosemary, chopped
2 tablespoons of fresh thyme, chopped
1 teaspoon of black pepper

Directions
Preheat the oven to 350 degrees F.
In a small bowl, combine the garlic, rosemary, thyme, pepper, salt, and olive oil. Mix until well combined.
Rub the mixture all over the prime rib roast.
Place the roast in a roasting pan and cover with aluminum foil.
Roast in the preheated oven for 2 hours and 30 minutes.
Remove the foil and roast for an additional 30 minutes, or until the internal temperature reaches 135 degrees F.
Remove from the oven and let rest for 10 minutes before carving.
