Chickpea and Quinoa Salad with Lemon and Tahini

Ingredients

  • 1 cup cooked quinoa
  • 1 can chickpeas, rinsed and drained
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tahini
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine quinoa, chickpeas, red onion, cucumber, parsley and mint.
  2. In a small bowl, whisk together olive oil, lemon juice, tahini, salt and pepper.
  3. Pour dressing over the quinoa mixture and toss until all the ingredients are evenly coated.
  4. Serve the salad immediately or chill in the refrigerator for up to two days.
