Ingredients
- 1 cup cooked quinoa
- 1 can chickpeas, rinsed and drained
- 1/4 cup diced red onion
- 1/4 cup diced cucumber
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon tahini
- Salt and pepper to taste
Directions
- In a large bowl, combine quinoa, chickpeas, red onion, cucumber, parsley and mint.
- In a small bowl, whisk together olive oil, lemon juice, tahini, salt and pepper.
- Pour dressing over the quinoa mixture and toss until all the ingredients are evenly coated.
- Serve the salad immediately or chill in the refrigerator for up to two days.
