Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1/2 cup breadcrumbs

Directions

  1. Preheat the oven to 375 degrees F.
  2. Toss the cauliflower and garlic with the olive oil and spread out on a baking sheet. Roast for 20 minutes, or until the cauliflower is tender and golden brown.
  3. Meanwhile, melt the butter in a medium saucepan over medium-low heat. Add the flour and whisk until lightly golden, about 1 minute. Slowly whisk in the milk and cook, stirring constantly, until the sauce thickens, about 5 minutes.
  4. Remove the sauce from the heat and stir in the salt, pepper, and cheese. Add the roasted cauliflower and garlic and mix to combine.
  5. Pour the cauliflower mixture into a greased baking dish and top with the breadcrumbs. Bake for 25 minutes, or until the top is golden brown and bubbly.
