Ingredients

  • 1 cup pitted dates
  • 2/3 cup walnuts
  • 2 tablespoons honey
  • 2 tablespoons coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons shredded coconut

Directions

  1. In a food processor, combine the dates, walnuts, honey, coconut oil, and spices. Process until the mixture is smooth.
  2. Transfer the mixture to a bowl and stir in the shredded coconut.
  3. Form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Refrigerate for at least 1 hour, or until the balls are firm.
  5. Store in an airtight container in the refrigerator.
