Ingredients

  • 2 game hens
  • 1 cup wild rice
  • 2 cups chicken broth
  • 8 ounces mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a saucepan, bring the chicken broth to a boil. Add the wild rice, reduce the heat to low, cover, and simmer for 45 minutes or until the rice is tender and the broth is absorbed.
  3. While the rice is cooking, heat the butter and olive oil in a skillet over medium heat. Add the mushrooms, onion, and garlic. Sauté until the mushrooms are golden brown and the onions are translucent, about 5 minutes. Season with salt, pepper, and dried thyme.
  4. Remove the skillet from the heat and let the mushroom mixture cool slightly.
  5. Once the rice is cooked, combine it with the mushroom mixture in a bowl. Stir well to incorporate the flavors.
  6. Rinse the game hens and pat them dry with paper towels. Season the inside and outside of the hens with salt and pepper.
  7. Divide the rice and mushroom filling evenly between the two game hens. Gently stuff the hens with the filling, being careful not to overstuff.
  8. Place the stuffed game hens in the greased baking dish. Cover with foil and bake for 40 minutes.
  9. After 40 minutes, remove the foil and continue baking for an additional 15-20 minutes or until the hens are cooked through and the skin is golden brown.
  10. Remove the game hens from the oven and let them rest for 10 minutes before serving.
  11. Serve the Game Hen Stuffed with Wild Rice and Mushrooms with a side of roasted vegetables for a complete and delicious meal.
