Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit (such as berries, kiwi, and peaches)
  • 1/2 cup fruit jelly or preserve (any flavor)

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake in the preheated oven for 50-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove the cheesecake from the oven and let it cool completely. Once cooled, refrigerate for at least 4 hours or overnight.
  7. Before serving, carefully remove the sides of the springform pan.
  8. Arrange the mixed fresh fruit on top of the chilled cheesecake.
  9. In a small saucepan, heat the fruit jelly or preserve over low heat until melted and slightly runny. Drizzle the jelly over the fruit.
  10. Slice and serve chilled. Enjoy!
