Ingredients

  • 1 tablespoon sesame oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1 cup diced carrots
  • 1 cup frozen peas and carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup diced celery
  • 1/2 cup diced mushrooms
  • 1 package extra-firm tofu, crumbled
  • 1/2 cup vegetable broth
  • 2 tablespoons reduced-sodium soy sauce
  • 3 cups cooked rice
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro

Directions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the onion, garlic, ginger, red pepper flakes, and salt and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the carrots, peas and carrots, bell pepper, celery, and mushrooms and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  4. Add the tofu and cook, stirring occasionally, until the tofu is lightly browned, about 5 minutes.
  5. Add the vegetable broth and soy sauce and cook, stirring occasionally, until the liquid has evaporated, about 5 minutes.
  6. Add the cooked rice and stir to combine. Cook, stirring occasionally, until the rice is heated through, about 5 minutes.
  7. Stir in the scallions and cilantro and serve.
