Ingredients

  • 1 small pumpkin, peeled and cubed
  • 2 tablespoons olive oil

  • 1 teaspoon turmeric

  • Salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, mix together the cubed pumpkin, olive oil, cumin, coriander, turmeric, paprika, salt, and pepper.
  3. Spread the pumpkin in an even layer on a baking sheet and bake in the preheated oven for 25 to 30 minutes, or until the pumpkin is golden brown and cooked through.
