Ingredients

  • 1 cup green olives, pitted and halved
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup olive oil

Directions

  1. In a shallow bowl, beat the eggs with a fork.
  2. In a separate shallow bowl, mix together the breadcrumbs.
  3. Dip each olive half in the beaten egg, and then in the breadcrumbs, making sure each olive is completely coated.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Fry the olives for about 2 minutes per side, or until golden brown.
  6. Remove the olives from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
  7. Serve warm.
