Ingredients
- 1 cup green olives, pitted and halved
- 2 eggs
- 1 cup breadcrumbs
- 1/4 cup olive oil
Directions
- In a shallow bowl, beat the eggs with a fork.
- In a separate shallow bowl, mix together the breadcrumbs.
- Dip each olive half in the beaten egg, and then in the breadcrumbs, making sure each olive is completely coated.
- Heat the olive oil in a large skillet over medium-high heat.
- Fry the olives for about 2 minutes per side, or until golden brown.
- Remove the olives from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
- Serve warm.
