This recipe for homemade stewed tomatoes is perfect for using up all those ripe tomatoes from the garden. The tomatoes are cooked low and slow with a blend of herbs and spices until they are tender and bursting with flavor. Serve them as a side dish, over pasta, or use them in your favorite recipes.

Ingredients

  • 6 lbs ripe tomatoes
  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped

Directions

  1. Bring a large pot of water to a boil. Score an X on the bottom of each tomato and place them in the boiling water for 30 seconds.
  2. Remove the tomatoes from the water and place them in a bowl of ice water to cool. Peel the skin off the tomatoes and chop them into chunks.
  3. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  4. Add the chopped tomatoes, salt, pepper, sugar, basil, and parsley to the pot. Bring to a simmer and cook for 45-50 minutes, stirring occasionally.
  5. Once the tomatoes have cooked down and are tender, taste and adjust seasoning as needed. Serve hot or store in an airtight container in the refrigerator.
