Ingredients
- 6 lbs ripe tomatoes
- 1/4 cup olive oil
- 1 onion, diced
- 2 cloves of garlic, minced

- 1 tbsp fresh basil, chopped
- 1 tbsp fresh parsley, chopped
Directions
- Bring a large pot of water to a boil. Score an X on the bottom of each tomato and place them in the boiling water for 30 seconds.
- Remove the tomatoes from the water and place them in a bowl of ice water to cool. Peel the skin off the tomatoes and chop them into chunks.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the chopped tomatoes, salt, pepper, sugar, basil, and parsley to the pot. Bring to a simmer and cook for 45-50 minutes, stirring occasionally.
- Once the tomatoes have cooked down and are tender, taste and adjust seasoning as needed. Serve hot or store in an airtight container in the refrigerator.
