Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced

- 6 cups vegetable broth
- 4 cans white beans, drained and rinsed
- 2 bay leaves

Directions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5 minutes.
- Add the garlic, thyme, and rosemary, and cook for an additional 2 minutes.
