Ingredients
- 3 tablespoons butter
- 3 large onions, sliced
- 2 cloves garlic, minced

- 1 teaspoon dried oregano
- Salt and pepper to taste
- 6 cups beef stock
- 1 bay leaf
- 2 tablespoons Worcestershire sauce
- 1/4 cup white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 baguette, sliced and toasted
Directions
- In a large pot over medium heat, melt the butter. Add the onions and cook until softened and lightly golden, about 10 minutes.
- Add the garlic, thyme, oregano, salt, and pepper. Cook for an additional 2 minutes.
- Add the beef stock, bay leaf, Worcestershire sauce, and white wine. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Stir in the Parmesan cheese and parsley. Cook for an additional 5 minutes.
- Serve the soup with the toasted baguette slices.
