Ingredients

  • 4 slices of bacon
  • 4 large eggs
  • Salt and pepper to taste
  • 4 slices of Swiss cheese
  • 1 baguette, cut into 4 pieces and halved lengthwise
  • 2 tablespoons butter, softened
  • 1 tablespoon Dijon mustard
  • 1/4 cup mayonnaise
  • Lettuce and tomato slices, for serving

Directions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.
  2. In a medium bowl, whisk the eggs together with salt and pepper.
  3. Heat the same skillet over medium-low heat. Pour the whisked eggs into the skillet and cook, stirring occasionally, until scrambled and cooked through, about 3-4 minutes. Remove from heat.
  4. Preheat the broiler in your oven.
  5. Spread butter on the cut sides of each baguette piece. Place the baguette pieces on a baking sheet, buttered side up, and broil for 1-2 minutes, or until lightly toasted.
  6. In a small bowl, mix together the Dijon mustard and mayonnaise.
  7. Spread the Dijon-mayo mixture on the toasted sides of each baguette piece.
  8. Place a slice of Swiss cheese on the bottom half of each baguette piece. Top with a quarter of the scrambled eggs and two slices of bacon.
  9. Add lettuce and tomato slices, if desired, and cover with the top half of each baguette piece.
