Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins
  • Whipped cream and cinnamon, for garnish

Directions

  1. Preheat the oven to 325°F (163°C).
  2. In a large saucepan, combine the Arborio rice, milk, sugar, butter, vanilla extract, ground cinnamon, ground nutmeg, and salt. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Once the mixture reaches a boil, reduce the heat to low and simmer for about 10 minutes, or until the rice is partially cooked and the mixture has thickened slightly.
  4. Remove the saucepan from the heat, and stir in the raisins.
  5. Transfer the rice pudding mixture to a greased baking dish, and smooth the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the pudding is set.
  7. Remove from the oven and let cool for a few minutes before serving. The pudding will continue to firm up as it cools.
  8. Serve the Baked Swedish Rice Pudding warm or chilled, and garnish with whipped cream and a sprinkle of cinnamon.
