Ingredients
- 1 (3-4 pound) rib roast
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Directions
- Preheat oven to 325°F.
- In a small bowl, mix together garlic, olive oil, salt, pepper, oregano, and thyme.
- Rub the garlic mixture all over the roast.
- Place the roast in a roasting pan and roast in preheated oven until the internal temperature reaches 135°F, about 1-2 hours.
