Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 can chickpeas, drained and rinsed
  • 2 carrots, peeled and chopped
  • 1 sweet potato, peeled and diced
  • 1 zucchini, diced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1/4 cup dried apricots, chopped
  • 1/4 cup raisins
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in cumin, coriander, cinnamon, turmeric, paprika, and cayenne pepper.
  4. Add chickpeas, carrots, sweet potato, zucchini, and bell pepper.
  5. Pour in diced tomatoes and vegetable broth.
  6. Add dried apricots and raisins, season with salt and pepper.
  7. Cover and simmer for 30 minutes, stirring occasionally.
