Ingredients

  • 1 cup long grain white rice
  • 1 cup frozen peas
  • 1/2 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 teaspoon minced garlic
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion, bell pepper, garlic, cumin, chili powder, salt, and black pepper and sauté until the vegetables are softened, about 5 minutes.
  2. Add the rice and stir to combine. Add 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  3. Add the frozen peas, cilantro, parsley, and basil. Stir to combine and cook for an additional 5 minutes, or until the rice is cooked through and the peas are tender.
  4. Remove from heat and serve.
