Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons yellow curry powder
  • 1 cup coconut milk
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas, thawed

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2 minutes, stirring occasionally.
  2. Add the garlic and curry powder and cook for an additional minute.
  3. Add the shrimp and cook until just pink, about 3 minutes.
  4. Stir in the coconut milk, salt, and pepper. Simmer until the sauce is thickened, about 5 minutes.
  5. Stir in the peas and cook for an additional 3 minutes.
  6. Serve over rice and enjoy!
