Ingredients

  • 1 teaspoon olive oil
  • 1 cup cooked chickpeas
  • 1/2 cup vegan mayonnaise
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 teaspoon Old Bay seasoning
  • 1 tablespoon Dijon mustard
  • 1/2 cup vegan bread crumbs
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste
  • Oil for frying

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chickpeas and cook for 5 minutes, stirring occasionally.
  3. Remove the chickpeas from the skillet and transfer to a bowl. Mash the chickpeas with a fork.
  4. Add the mayonnaise, celery, red onion, Old Bay seasoning, mustard, bread crumbs, parsley, salt, and pepper to the mashed chickpeas and mix until well combined.
  5. Form the mixture into small patties.
  6. Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the skillet.
  7. Add the patties to the skillet and cook for 5 minutes, flipping once, until golden brown and heated through.
  8. Serve warm.
