Ingredients
- 1 teaspoon olive oil
- 1 cup cooked chickpeas
- 1/2 cup vegan mayonnaise
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/2 teaspoon Old Bay seasoning
- 1 tablespoon Dijon mustard
- 1/2 cup vegan bread crumbs
- 2 tablespoons minced fresh parsley
- Salt and pepper to taste
- Oil for frying
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the chickpeas and cook for 5 minutes, stirring occasionally.
- Remove the chickpeas from the skillet and transfer to a bowl. Mash the chickpeas with a fork.
- Add the mayonnaise, celery, red onion, Old Bay seasoning, mustard, bread crumbs, parsley, salt, and pepper to the mashed chickpeas and mix until well combined.
- Form the mixture into small patties.
- Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the skillet.
- Add the patties to the skillet and cook for 5 minutes, flipping once, until golden brown and heated through.
- Serve warm.
