Wash and dry the potatoes. Slice the potatoes into thin slices, about 1/8-inch thick, making sure to not cut all the way through the potatoes.
Place the potatoes in a large bowl and drizzle with olive oil. Sprinkle with garlic powder, paprika, oregano, salt, pepper, and thyme. Toss to coat the potatoes evenly.
Place the potatoes in the air fryer basket in a single layer. Air fry for 20 minutes, flipping halfway through. The potatoes should be golden brown and crispy.
Sprinkle with fresh parsley and serve.
