Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/4 cup tomato paste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1 bay leaf
- 3 cups beef stock
- 2 cups water
- 2 cups cubed beef
- Salt and pepper to taste
Directions
- In a large pot, heat 1 tablespoon oil over medium-high heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the carrots, potatoes, bell peppers, tomato paste, cumin, paprika, black pepper, garlic powder, oregano, bay leaf, beef stock, and water. Stir to combine.
- Bring to a boil, reduce heat to low, and simmer for 15 minutes.
- Add the cubed beef and simmer for an additional 10 minutes, or until the beef is cooked through and the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley or cilantro.
