Directions
Preheat oven to 350°F (180°C). Grease a 9-inch (23 cm) pie dish with butter.
Lay out the phyllo dough on a flat surface. Cut the dough into 12-inch (30 cm) squares. Place one square of dough into the prepared pie dish and brush with melted butter. Repeat with the remaining dough, layering the squares and brushing each one with butter until the dish is full.
In a large bowl, whisk together the sugar, flour, and salt. In a separate bowl, whisk together the eggs and heavy cream until light and fluffy. Add the egg mixture to the sugar mixture and mix together until combined. Add the vanilla and cinnamon, and mix until combined.
Pour the custard into the prepared pie dish. Top with the diced fruit. Bake for 50-60 minutes, or until the custard is set and the top is golden brown.
