These curried shrimp tartlets are a delightful appetizer or party snack that will impress your guests. The flaky pastry shells are filled with a creamy and spicy shrimp filling seasoned with aromatic curry spices. They are easy to make ahead and can be enjoyed warm or at room temperature.

Ingredients

  • 1 package frozen mini tart shells
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Directions

  1. Preheat your oven to the temperature specified on the tart shell package.
  2. Arrange the frozen tart shells on a baking sheet and bake them according to the package instructions, until they are golden brown and crisp.
  3. In the meantime, prepare the shrimp filling. Heat the butter in a skillet over medium heat.
  4. Add the chopped onion and minced garlic to the skillet and sauté until they are soft and translucent.
  5. Add the shrimp to the skillet and cook them until they turn pink and opaque, about 2-3 minutes per side.
  6. Remove the shrimp from the skillet and chop them into small pieces.
  7. In the same skillet, add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using), and cook them for about 1 minute to toast the spices.
  8. Pour in the heavy cream and stir well to combine with the spices.
  9. Bring the mixture to a simmer and let it cook for 2-3 minutes until slightly thickened.
  10. Add the chopped shrimp back into the skillet and toss them in the creamy curry sauce.
  11. Season with salt and pepper to taste.
  12. Once the tart shells are ready, remove them from the oven and let them cool slightly.
  13. Carefully spoon the curried shrimp filling into each tart shell, filling them until slightly heaped.
  14. Garnish the tartlets with chopped fresh cilantro.
  15. Serve the curried shrimp tartlets warm or at room temperature, and enjoy!
