Ingredients
- 1 package frozen mini tart shells
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Directions
- Preheat your oven to the temperature specified on the tart shell package.
- Arrange the frozen tart shells on a baking sheet and bake them according to the package instructions, until they are golden brown and crisp.
- In the meantime, prepare the shrimp filling. Heat the butter in a skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet and sauté until they are soft and translucent.
- Add the shrimp to the skillet and cook them until they turn pink and opaque, about 2-3 minutes per side.
- Remove the shrimp from the skillet and chop them into small pieces.
- In the same skillet, add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using), and cook them for about 1 minute to toast the spices.
- Pour in the heavy cream and stir well to combine with the spices.
- Bring the mixture to a simmer and let it cook for 2-3 minutes until slightly thickened.
