Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 4 large egg yolks
  • 14 ounces sweetened condensed milk
  • ½ cup fresh lime juice
  • 2 teaspoons lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Lime slices (for garnish)
  • Whipped cream (for garnish)

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  3. Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish. Use the back of a measuring cup to firmly press the crust. Bake for 10 minutes.
  4. In a separate bowl, whisk together the egg yolks, condensed milk, lime juice, and lime zest until well combined.
  5. Pour the filling into the pre-baked crust and smooth the top with a spatula. Bake for an additional 15 minutes or until the filling is set.
  6. Remove the pie from the oven and let it cool to room temperature. Then, refrigerate for at least 2 hours to allow it to firm up.
  7. In a chilled mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled pie.
  8. Garnish the pie with lime slices and refrigerate until ready to serve. Serve chilled and enjoy!
