Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup ground flaxseed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, quinoa, red onion, parsley, flaxseed, olive oil, garlic powder, smoked paprika, cumin, and salt. Pulse until everything is well combined but still slightly chunky.
  3. Form the mixture into four patties. Place on the prepared baking sheet and bake for 15 minutes, or until golden brown.
  4. Serve immediately with your favorite toppings or in a bun.
