Ingredients
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup cooked quinoa
- 1/2 cup finely chopped red onion
- 1/4 cup finely chopped fresh parsley
- 1/4 cup ground flaxseed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
Directions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a food processor, combine chickpeas, quinoa, red onion, parsley, flaxseed, olive oil, garlic powder, smoked paprika, cumin, and salt. Pulse until everything is well combined but still slightly chunky.
- Form the mixture into four patties. Place on the prepared baking sheet and bake for 15 minutes, or until golden brown.
- Serve immediately with your favorite toppings or in a bun.
