Ingredients
- 1 lb. macaroni pasta
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped olives (black or green)
- 1/4 cup chopped fresh parsley
- 1/2 cup chopped roasted red peppers (jarred)
- 1/4 cup chopped pepperoncini (jarred)
- 1/4 cup chopped salami
- 1/4 cup shredded mozzarella
Directions
- Cook the pasta according to the package directions. Drain and cool.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, oregano, basil, thyme, red pepper flakes, salt and pepper.
- In a large bowl, combine the cooled pasta, olives, parsley, roasted red peppers, pepperoncini, salami, and mozzarella.
- Pour the dressing over the pasta mixture and toss to combine.
- Cover and refrigerate for at least 1 hour before serving.
