Cook the pasta according to the package directions. Drain and cool.
In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, oregano, basil, thyme, red pepper flakes, salt and pepper.
In a large bowl, combine the cooled pasta, olives, parsley, roasted red peppers, pepperoncini, salami, and mozzarella.
Pour the dressing over the pasta mixture and toss to combine.
Cover and refrigerate for at least 1 hour before serving.
