Ingredients

  • 1 lb. macaroni pasta
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped olives (black or green)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped roasted red peppers (jarred)
  • 1/4 cup chopped pepperoncini (jarred)
  • 1/4 cup chopped salami
  • 1/4 cup shredded mozzarella

Directions

  1. Cook the pasta according to the package directions. Drain and cool.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, oregano, basil, thyme, red pepper flakes, salt and pepper.
  3. In a large bowl, combine the cooled pasta, olives, parsley, roasted red peppers, pepperoncini, salami, and mozzarella.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Cover and refrigerate for at least 1 hour before serving.
