Ingredients

  • 2 medium jicama, peeled and chopped into small cubes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup fresh lime juice
  • 1 teaspoon olive oil
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the jicama, bell peppers, lime juice, olive oil, salt, and pepper.
  2. Mix well to combine.
  3. Serve chilled or at room temperature.
