Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup white sugar
  • 4 large eggs, separated
  • 2/3 cup water
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed bananas

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together the sugar and egg yolks until light and fluffy. Beat in the water, oil, and vanilla until well blended. Beat in the mashed bananas.
  4. Stir in the flour mixture, mixing just until blended. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter. Pour the batter into the prepared pan.
  5. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
