Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1 teaspoon chili flakes
  • 1 teaspoon ground white pepper
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons light soy sauce
  • 1 tablespoon white vinegar
  • 1 tablespoon sugar
  • 2 cups vegetable broth
  • 1 (14-ounce) package extra-firm tofu, cubed
  • 1/2 cup sliced bamboo shoots, drained
  • 1/4 cup sliced shiitake mushrooms
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the garlic, ginger, chili flakes, white pepper, and black pepper and cook, stirring, until fragrant, about 1 minute.
  2. Add the soy sauce, vinegar, and sugar, and stir to combine. Add the vegetable broth and bring the mixture to a boil.
  3. Add the tofu, bamboo shoots, mushrooms, and scallions, and reduce the heat to low. Simmer for 15 minutes.
  4. Remove from heat and stir in the cilantro. Serve hot.
