- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon minced ginger
- 1 teaspoon chili flakes
- 1 teaspoon ground white pepper
- 1/2 teaspoon ground black pepper
- 2 tablespoons light soy sauce
- 1 tablespoon white vinegar
- 1 tablespoon sugar
- 2 cups vegetable broth
- 1 (14-ounce) package extra-firm tofu, cubed
- 1/2 cup sliced bamboo shoots, drained
- 1/4 cup sliced shiitake mushrooms
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
Directions
- Heat the oil in a large pot over medium-high heat. Add the garlic, ginger, chili flakes, white pepper, and black pepper and cook, stirring, until fragrant, about 1 minute.
- Add the soy sauce, vinegar, and sugar, and stir to combine. Add the vegetable broth and bring the mixture to a boil.
- Add the tofu, bamboo shoots, mushrooms, and scallions, and reduce the heat to low. Simmer for 15 minutes.
- Remove from heat and stir in the cilantro. Serve hot.
