Directions
- In a large bowl, combine the mashed potatoes, grated onion, flour, salt, pepper, and garlic powder.
- Mix in the beaten eggs until everything is well combined.
- Heat the oil in a large skillet over medium-high heat.
- Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon.
- Cook the pancakes for 2-3 minutes on each side, or until they are golden brown and crispy.
- Remove the pancakes from the skillet and drain on paper towels.
- Serve with sour cream or applesauce.
