Ingredients

  • 1 pound okra
  • 3/4 cup white vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon celery seed
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground turmeric
  • 2 cloves garlic, minced
  • 1/2 cup water

Directions

  1. Wash and trim the okra, discarding any tough ends.
  2. In a medium saucepan, combine the vinegar, sugar, salt, celery seed, red pepper flakes, turmeric, garlic, and water. Bring to a boil, stirring to dissolve the sugar.
  3. Add the okra, stirring to coat. Reduce heat to low and simmer for 5 minutes.
  4. Remove from heat and let cool to room temperature.
  5. Pack the okra into a clean, sterilized jar. Pour the liquid over the okra, making sure it is completely covered.
  6. Seal the jar and store in the refrigerator for up to a month.
