Ingredients

  • 4 salmon fillets (6 ounces each)
  • 1 pound purple potatoes, peeled and cubed
  • 4 tablespoons unsalted butter, divided
  • 1/3 cup whole milk or heavy cream
  • Salt and pepper to taste
  • 1/2 pound French green beans, trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh dill
  • Lemon wedges, for serving

Directions

  1. Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper to taste.
  2. In a large pot, bring salted water to a boil. Add the purple potatoes and cook until tender, approximately 15-20 minutes. Drain the potatoes and return them to the pot.
  3. Add 3 tablespoons of butter and the milk or heavy cream to the pot with the potatoes. Mash the potatoes using a potato masher or fork until smooth and creamy. Season with salt and pepper to taste.
  4. While the potatoes are cooking, blanch the French green beans in a pot of boiling water for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  5. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  6. Place the salmon fillets in the preheated oven and bake for 12-15 minutes until cooked through and flaky.
  7. Add the blanched green beans to the skillet with the garlic. Squeeze the lemon juice over the beans and toss to coat. Cook for 2-3 minutes until the beans are warmed through.
  8. Remove the salmon from the oven and let it rest for a few minutes. Sprinkle the fillets with chopped fresh dill.
  9. Divide the purple mashed potatoes among serving plates. Place a salmon fillet on top of each mound of potatoes. Serve with the lemon garlic green beans and lemon wedges on the side.
